Instructions

Infuse Mint Flavor (Optional):
In a saucepan, combine milk and fresh mint leaves. Heat until steaming, then remove from heat and let steep for 30 minutes. Strain and discard mint leaves. -
Prepare Custard Base
In a separate bowl, whisk egg yolks and sugar until pale. Slowly add the warm milk to the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and coats the back of a spoon (about 170°F or 77°C). Do not boil. -
Combine and Chill
